hello,
following the cat scratches on my sofa (see pictures), am I sure to find the same shade (with patina)?

Yes in your case it is possible to find the colour again, but this work requires a finish with a colouring agent which requires the use of a pistol with know-how, because at the origin your leather was nuanced, that's what we call a fake wild. The paste repairs the scratches, one or two layers of bordeaux pigment recolouring agent (solid colour) then the colouring to make the shades and varnishes... It remains the possibility to recolour in plain with a tinted varnish, the colour will be close but not identical because no shades in this case.
