Edges existing around the armrests and seats

Hello,
I have 2 thick leather canapes of very good quality currently in burgundy, I ordered 2 kits to recolour them in grey, currently there are black selvedges around the armrests and seats, the ideal would be to keep them in black! otherwise, they can be painted in grey! when do you think? what is the technique if I want to keep them black?
